Low-Carb Spanakopita Recipe

Ingredients
For the Filling:
2 cups fresh spinach, chopped
1 cup ricotta cheese
½ cup feta cheese, crumbled
½ cup shredded mozzarella cheese
2 eggs, beaten
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried dill (optional)
For the Low-Carb Crust:
1 ½ cups almond flour
¼ cup butter, melted
1 egg
½ teaspoon salt

Instructions
Prepare the Crust:
Preheat the oven to 375°F (190°C).
In a bowl, mix almond flour, melted butter, egg, and salt until a dough forms.
Press the dough into a parchment-lined baking dish to form the bottom crust.
Prepare the Filling:
In a separate bowl, mix spinach, ricotta, feta, mozzarella, eggs, and seasonings.
Stir until well combined.
Assemble & Bake:
Spread the filling evenly over the crust.
Bake for 25-30 minutes until golden brown on top.
Cool & Serve:
Let it cool for a few minutes before slicing.
Serve warm and enjoy!
