Mediterranean Mint & Feta Stuffed Flatbreads

Ingredients:

  • 200g self-raising flour
  • 170g Greek yogurt
  • 100g feta, crushed
  • 2 tbsp cream cheese
  • A handful of mint leaves, finely chopped
  • 100g spinach, wilted and chopped
  • 2 garlic cloves, minced
  • 1 tsp black pepper
  • 1 tbsp mint sauce
  • 1 tbsp olive oil

Directions:

  1. Prepare the Dough: In a mixing bowl, combine the self-raising flour and Greek yogurt. Knead until a smooth dough forms. Cover and let rest for 10 minutes.
  2. Make the Filling: In another bowl, mix crushed feta, cream cheese, chopped mint leaves, wilted spinach, garlic, black pepper, and mint sauce until well combined.
  3. Stuff the Flatbreads: Divide the dough into 4 portions. Roll each piece into a circle. Spoon some filling onto one side, fold over, and seal the edges.
  4. Cook the Flatbreads: Heat olive oil in a pan over medium heat. Cook each stuffed flatbread for 2-3 minutes per side until golden brown and crisp.
  5. Serve & Enjoy: Serve warm with yogurt or a fresh Mediterranean salad.
