Cheesy Baked Meatloaf
Ingredients:
For the Meatloaf:
2 pounds ground beef
1 cup breadcrumbs
1 cup grated Parmesan cheese
1/2 cup milk
2 eggs, beaten
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon dried parsley
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
For the Topping:
1 cup marinara or tomato sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tablespoon dried parsley

Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, beaten eggs, chopped onion, minced garlic, Worcestershire sauce, dried parsley, dried thyme, salt, and black pepper.
Mix everything until well combined but do not overwork the meat.
Shape the Meatloaf:
Transfer the meat mixture into a loaf pan or shape it into a loaf shape on a baking sheet lined with parchment paper.
Bake the Meatloaf:
Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C).
Add the Topping:
Remove the meatloaf from the oven and spread the marinara or tomato sauce over the top.
Sprinkle the shredded mozzarella cheese, grated Parmesan cheese, and dried parsley evenly over the sauce.
Final Bake:
Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.
Serve:
Allow the meatloaf to rest for 10 minutes before slicing.
Serve warm, garnished with additional dried parsley if desired.
