Bistec Ranchero Recipe
✅ Ingredients:
- 500g (1 lb) beef steak (thinly sliced, e.g., sirloin or flank)
- 2 tbsp oil (vegetable or olive)
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2-3 ripe tomatoes, chopped (or 1 can diced tomatoes)
- 1-2 jalapeños or serrano peppers, sliced (adjust to taste)
- 1 potato, diced (optional but traditional)
- ½ tsp cumin
- ½ tsp oregano
- Salt and pepper to taste
- ½ cup beef broth or water
- Fresh cilantro for garnish (optional)
Instructions:
- Prep the beef:
Season beef slices with salt, pepper, and a pinch of cumin. - Sear the meat:
In a large skillet, heat oil over medium-high heat. Sear the beef until browned (about 2–3 minutes per side). Remove and set aside. - Cook the veggies:
In the same skillet, add a bit more oil if needed. Sauté onion and garlic until fragrant and soft (2–3 minutes). Add diced tomatoes, peppers, oregano, and the optional potatoes. Cook 5 minutes, stirring often. - Simmer together:
Return beef to the pan. Add beef broth and stir. Cover and let simmer for 15–20 minutes, or until the beef is tender and potatoes are cooked. - Taste and adjust:
Add more salt or pepper if needed. Garnish with cilantro before serving.
Serving Suggestions:
- Serve with Mexican rice, refried beans, and warm tortillas.
- Pairs well with avocado or lime wedges on the side.
