Ingredients:
1 medium cauliflower (about 500 g), cut into florets
2 large eggs
½ cup (60 g) all-purpose flour
¼ cup (25 g) grated Parmesan cheese (optional for extra flavor)
2–3 tablespoons finely chopped parsley or green onions
1 small garlic clove, minced
Salt and black pepper to taste
½ teaspoon paprika (optional)
Oil for frying (vegetable or olive oil)
👩🍳 Instructions:
Cook the cauliflower:
Boil or steam the cauliflower florets for about 6–8 minutes until tender. Drain very well and let cool slightly.
Mash it:
Use a fork or potato masher to roughly mash the cauliflower. It should still have a few small chunks for texture.
Mix the batter:
In a large bowl, combine the mashed cauliflower, eggs, flour, Parmesan (if using), parsley, garlic, and seasonings. Stir until a thick batter forms.
If it’s too wet, add a bit more flour.
Form fritters:
Scoop about 2 tablespoons of the mixture and flatten slightly into patties.
Fry:
Heat 2–3 tablespoons of oil in a skillet over medium heat. Fry the fritters for about 3–4 minutes per side until golden brown and crisp.
Drain & serve:
Place on paper towels to remove excess oil. Serve warm with your favorite dip (garlic yogurt sauce, sour cream, or aioli).

Garlic Yogurt Sauce:
Mix ½ cup Greek yogurt, 1 minced garlic clove, 1 teaspoon lemon juice, salt, and a drizzle of olive oil.
