Ingredients:
One 8 inch cast iron pan
10-12 white corn tortillas, lightly fried
One cup roasted, peeled, chopped Hatch green chile 3 quarter cups grated cheddar
3 quarter cups grated Monterey Jack
One half cup chopped white onion
2-3 cloves of garlic
Mexican oregano, pepper, garlic salt to taste (approx. ¼-½ teaspoon)
Instructions:
Lightly fry your tortillas to hold up to the chile and cheese
Layer in cast iron and bake at 375 degrees for 30 minutes.
