Huevos con Salchicha en Salsa Roja Recipe

Ingredients:
For the Salchicha en Salsa Roja:
4 hot dogs or smoked sausages, sliced into rounds 🌭

2 Roma tomatoes, diced 🍅

¼ white onion, diced 🧅

1 garlic clove, minced 🧄

½ cup tomato sauce

For the Refried Beans:
1 cup cooked pinto or black beans

1 tbsp lard or vegetable oil

¼ white onion, finely chopped

¼ tsp salt

For the Eggs:
2 eggs 🍳

1 tbsp vegetable oil or butter

To Serve:
Queso fresco 🧀

Corn tortillas 🌽

Dried chile guajillo or chipotle (for garnish)

Directions :
1️⃣ Prepare the Salchicha en Salsa Roja
Heat 1 tbsp oil in a pan over medium heat.

Sauté onion & garlic until fragrant (about 2 minutes).

Add sliced hot dogs and cook until lightly browned.

Stir in tomatoes, tomato sauce, chipotle peppers, cumin, black pepper, and salt.

Simmer for 5-7 minutes, stirring occasionally, until sauce thickens.

2️⃣ Make the Refried Beans
Heat 1 tbsp lard or oil in a pan.

Add onion and cook until soft.

Stir in beans & salt, then mash until smooth.

Simmer for 2-3 minutes, stirring often.

3️⃣ Cook the Eggs
Heat 1 tbsp oil or butter in a pan.

Crack in eggs and cook until whites are set, but yolks are still runny (or to your liking).

4️⃣ Serve & Enjoy!
Plate the salchicha en salsa roja alongside the fried eggs.

Add a scoop of refried beans with a slice of queso fresco.

Garnish with dried chilies and serve with warm tortillas.
