Ingredients:
-1 1/2 Lbs Ground Beef
-1 Tbsp Pepper
-1 Tbsp Garlic Powder
-1 Tsp Salt
-1/2 Diced White Onion
-1 Lb Longaniza or Mexican Chorizo
-3 Diced Roma Tomatoes
-2 Tbsp Paprika
-Tbsp Cumin
-5 Cups Cooked Pinto Beans
-4 or 5 Cups Bean cooking liquid
-1/2 Cup Diced Pickled Jalapeños with brine/liquid
-1 Tbsp Chicken or Beef Bouillon
-1/4 Cup Finely Chopped Cilantro
-1 1/2 Cups Tomato Sauce
Instructions:
- Heat a medium pot over medium-high heat.
- Add ground beef, pepper, garlic powder, salt and stir to combine and cook until browned.
- Add onion, stir to combine and sauté for 1 minute.
- Add longaniza or Mexican chorizo to pot, cook the longaniza, stirring and breaking it into chunks until cooked.
- Add tomatoes and stir to combine. Add paprika, cumin and stir to combine.
- Add beans, liquid and stir to combine. Add diced jalapeños, chicken bouillon, cilantro, tomato sauce and stir to combine.
- Bring to a boil, reduce heat to low, cover pot and simmer for 15 minutes or until slightly thick.
