Melted cheese meets spicy Mexican chorizo—perfect for dipping tortillas or chips!
Ingredients:
8 oz Mexican chorizo (raw, casing removed)
2 cups shredded Oaxaca cheese (or a mix of Monterey Jack and Mozzarella)
1/4 cup diced white onion (optional)
1/4 cup diced tomatoes or pico de gallo (optional for garnish)
2 tablespoons chopped cilantro (for garnish)
Warm flour or corn tortillas for serving
Instructions:
- Cook the Chorizo:
In a skillet over medium heat, cook the chorizo until browned and fully cooked. If it’s greasy, drain some fat—but keep a little for flavor!
- Prep the Cheese:
Spread the shredded cheese evenly in a small cast-iron skillet or oven-safe baking dish.
- Add Chorizo:
Spoon the cooked chorizo over the top of the cheese. Optional: sprinkle some diced onion if desired.
- Bake:
Place under a broiler or in a 425°F (220°C) oven for about 8–10 minutes, or until the cheese is fully melted and bubbling around the edges.
- Garnish:
Top with diced tomatoes or pico de gallo, fresh cilantro, and serve hot!
